Power Bars

I love snacks. So much. But because I am a student who is often on the go, I sometimes struggle to find healthy snacks that fill me up and can be taken with me that are not super high in artificial ingredients and sugar. So when I found the recipe for these Power Bars, on Kinetic Fuel, which are packed with lots of real ingredients, I was so excited to try them.

The bars are easy to make, with about 15 minutes of prep, and 20 minutes of cooking time. Plus, since they’re made in one large bowl, doing the dishes is a piece of cake. The only downfall to the recipe, is that there are lots of ingredients to manage, but of course, that’s what makes them so tasty and satisfying!

Power Bars

1 Cup Almond Flour

1 1/2 Cup Cooked Quinoa

2 Cup Uncooked Oats

1/2 Cup Chopped Walnuts

1 Tsp Cinnamon

2/3 Cup Peanut Butter

1/3 Cup Honey

2 Eggs

2/3 Cup Applesauce

1 Tsp Vanilla

1/2 Scoop Protein Powder (unflavored)

1/3 Cup Chocolate Chips (optional)

In just three simple steps, you can have tasty Power Bars for the whole family to snack on at home, or pack into a lunchbox and take on the go:

  1. Combine the Quinoa, Applesauce, Vanilla, Eggs, Peanut Butter, and Honey in a large bowl, and stir.
  2. Add the remaining dry ingredients, and mix thoroughly.
  3. Pour into a 9×13 pan, greased with coconut oil, and cook at 375° for 20 minutes.
